Quinoa Lentil Soup – full of protein, vegan, gluten free, and made with just 6 ingredients and in 2 easy steps.
Ingredients
  • 1/2 cup beluga lentils (uncooked)
  • 1/2 cup quinoa uncooked
  • 4 cups vegetable broth
  • 2 carrots chopped
  • 2 Tbs Tomato Paste
  • 2 celery stalks chopped (optional)
  • 4 cloves garlic minced
  • salt, pepper
Instructions
  1. Cooking the Quinoa according the manufacturer’s directions.
  2. In a casserole add lentils, vegetable broth, veggies, tomato paste, minced garlic and optional celery stalks. Cook until everything is soft, then season with salt and pepper. Serve with quinoa.
