Quinoa Lentil Soup – full of protein, vegan, gluten free, and made with just 6 ingredients and in 2 easy steps.
Ingredients
- 1/2 cup beluga lentils (uncooked)
- 1/2 cup quinoa uncooked
- 4 cups vegetable broth
- 2 carrots chopped
- 2 Tbs Tomato Paste
- 2 celery stalks chopped (optional)
- 4 cloves garlic minced
- salt, pepper
Instructions
- Cooking the Quinoa according the manufacturer’s directions.
- In a casserole add lentils, vegetable broth, veggies, tomato paste, minced garlic and optional celery stalks. Cook until everything is soft, then season with salt and pepper. Serve with quinoa.
