SLOW COOKER BEEF STEW

INGREDIENTS
  • 2 pounds stew beef, cut into 1 inch cubes
  • 2 tablespoons butter
  • ¼ cup flour
  • 2 cups water
  • 1 cup apple cider or apple juice
  • ½ cup steak sauce
  • ¼ teaspoon ground thyme
  • 4 medium potatoes, peeled and cubed
  • 3 medium carrots, chopped
  • 1 medium onion, chopped
  • 1 cup frozen cut green beans
  • salt and pepper to taste
INSTRUCTIONS
  1. In a large skillet, melt butter over medium-high heat. Add beef and brown the outside. It does not need to be cooked through- just browned on the outside to keep it juicy in the slow cooker.
  2. Add the flour. Stir to incorporate, and set aside.
  3. In your slow cooker, mix together water, cider, steak sauce, thyme, and a pinch of salt and pepper.
  4. Add potatoes and vegetables and stir to combine.
  5. Add beef and stir again. Allow to cook on low in the slow cooker for 6-8 hours, until vegetables are tender and beef is cooked through. Add salt and pepper to taste before serving.
