CHICKEN PARMESAN MEATBALLS RECIPE

Ingredients
  • 1 pound ground chicken
  • 1 large egg
  • 1/2 cup Italian breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons olive oil
  • 1 (28 ounce) jar spaghetti sauce
  • 1 (16 ounce) pkg. penne pasta
  • 1 cup shredded mozzarella cheese
  • fresh basil, for garnish
Instructions
  1. In a large mixing bowl, combine chicken, egg, breadcrumbs, parmesan cheese, salt and pepper; set aside.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Roll chicken mixture into 1-inch balls and place in skillet.
  4. Brown meatballs on all sides and cook through completely.
  5. Drain excess oil and pour spaghetti sauce over the meatballs in the skillet.
  6. Cook for 3-5 minutes, or until sauce is heated through.
  7. Serve meatballs and sauce over cooked pasta and top with shredded mozzarella and fresh basil.
